Instructions

    1.
    Slice the extra-firm tofu into even slices and then cut them the other direction to make small cubes (about 1” x 1”). Place the cubed tofu into a medium-sized mixing bowl and toss with avocado oil, ¾ tsp kosher salt, and sambal paste (omit if you don't like spice).

    Place the coated tofu cubes into an air fryer basket with an air frying tray. Set the air fryer to 400 F and cook for 10 minutes. Shake the basket and cook for another 10 minutes at 400 F until crispy. Alternatively, bake in a conventional oven at 400 F, stirring occasionally, until crispy.

    Wash the kale, remove fibrous stems, and slice thinly. Place in a large salad bowl. Chop chives and cilantro, and tuck them into the kale. Add thinly sliced cucumber (about ⅛” thickness) and halved cherry tomatoes. Tuck a few pieces of fresh mint into the salad as well.

    Place the crispy air-fried tofu on top of the salad, right down the middle, allowing it to distribute naturally.
    5.
    In a small mixing bowl, combine tahini, ¼ tsp kosher salt, lemon juice, water, and 1 grated clove of garlic. The dressing should coat the back of a spoon; a line drawn through the coating should not run back together quickly.
    6.
    Drizzle the tahini dressing over the finished salad and serve immediately. Prep the salad ahead of time for softer kale, if desired.
