Description

Imagine a warm, comforting casserole that captures the essence of pizza, but without the traditional crust. This pizza casserole is a delightful layering of flavors and textures, perfect for a satisfying family meal. It begins with a savory base of seasoned ground pork, infused with aromatic Italian herbs that fill your kitchen with their inviting scent.

Thin strips of zucchini add a touch of freshness and subtle sweetness, contrasting beautifully with the richness of the pork. Slices of salty salami are nestled within the layers, providing bursts of intense, savory flavor that dance across your palate. The briny tang of sliced olives adds another layer of complexity, complementing the other savory components.

But the magic truly happens when the generous blanket of melted cheese is added. As it bakes, the cheese transforms into a golden, bubbly crust, its melted strings holding all the ingredients together in a harmonious embrace. Each spoonful of this casserole is an adventure, a delightful combination of textures and tastes that will leave you craving more.

The tender zucchini, the savory pork, the salty salami, the tangy olives, and the gooey, melted cheese all come together in perfect harmony. This casserole isn't just a meal; it's an experience. Consider serving it with a crisp garden salad, a side of roasted vegetables, or a creamy coleslaw to round out the meal and provide a refreshing counterpoint to the richness of the casserole.

This pizza casserole is a versatile dish that can be easily customized to suit your preferences. Feel free to experiment with different types of cheeses, meats, or vegetables to create your own unique variation. Instructions

    1.
Slice the ends from the zucchini, peel the outer skin and discard. Peel the zucchini into long wide ribbons and add to a bowl. Sprinkle with the salt and toss to combine. Set to one side for 20 minutes to draw any excess moisture out of the zucchini then drain away.
    2.
Preheat the oven to 400 degrees Fahrenheit. Heat the olive oil in a skillet over a medium heat and add the ground pork. Cook through until browned all over.
    3.
Spoon half of the ground pork into the base of an oven proof dish in an even layer. Layer over half of the zucchini strips so that they are overlapping. Make sure the layer of pork is covered with a layer of zucchini.
    4.
Spoon two tablespoons of marinara sauce over the zucchini layer. Spread the sauce across the zucchini with the back of the spoon so that it is evenly covered.
    5.
Add the onion and olives to a mixing bowl along with the oregano, grated mozzarella and grated cheddar. Stir well to combine the ingredients.
    6.
Sprinkle half of the cheese and olive mixture over the marinara layer. Again, ensure that this layer is as even as possible.
    7.
Repeat this process so that you have an additional layer of ground pork, zucchini, marinara and cheese mixture. Make sure that it is level to ensure an even bake. Transfer to the oven for 15 minutes until the cheese is melted and golden.
    8.
Whilst the casserole bakes, roughly tear the salami into bite sized chunks. After 15 minutes, remove the casserole from the oven and arrange the salami across the top. Return to the oven for a further 10 minutes until golden and everything is piping hot through. Serve hot.
