Description

This turkey fried rice transforms leftover cooked turkey into a comforting and flavorful meal. Diced turkey, stir-fried with an array of colorful low-carbohydrate vegetables, creates a dish that's both satisfying and wholesome. Imagine tender bites of turkey mingling with the slight crunch of bell peppers, the subtle sweetness of onions, and the earthy notes of mushrooms.

Each ingredient contributes to a symphony of textures and flavors that dance on your palate. The beauty of this dish lies in its simplicity and adaptability. It’s a fantastic way to use up leftover cooked turkey, preventing food waste and transforming it into something new and exciting.

The recipe is also easily customizable – feel free to swap out the vegetables for your favorites or whatever you have on hand. Broccoli florets, shredded cabbage, or even some chopped zucchini would all be welcome additions. A splash of soy sauce or tamari adds a savory depth to the dish, while a touch of sesame oil infuses it with an irresistible aroma.

Ginger and garlic, two culinary powerhouses, contribute warmth and complexity, creating a fragrant base that complements the other ingredients perfectly. A hint of red pepper flakes or a dash of your favorite hot sauce can add a delightful kick for those who enjoy a little heat. The stir-frying technique ensures that the vegetables retain their vibrant colors and crisp textures.

This quick cooking method also helps to meld the flavors together, creating a cohesive and harmonious dish. The result is a satisfying meal that's ready in minutes, perfect for a quick lunch or a light dinner. Serve this turkey fried rice on its own for a complete and balanced meal, or pair it with a side of steamed green beans or a crisp green salad for a more substantial feast.

Garnish with a sprinkle of sesame seeds and some chopped green onions for an added touch of flavor and visual appeal. This dish is not only delicious but also a healthy and convenient way to enjoy a comforting classic with a lighter twist.

Instructions

    1.
Heat a tablespoon of olive oil in a skillet over a medium heat. Add the turkey and cook until just browned all over.
    2.
Whilst the turkey is cooking, finely dice the onion, mince the garlic and dice the tomato and pepper. Once the turkey is just cooked, add to the pan with the remaining olive oil. Sweat gently until tender.
    3.
Add the cumin and paprika and stir well to combine.
    4.
Add the cauliflower rice to the pan, season and mix well. Let the rice cook for a minute until hot through.
    5.
Beat the eggs together in a small bowl. Make a well in the center of the rice and pour in the beaten egg. Let the egg settle and cook for a moment then take a spatula and scramble the mixture, folding it into the turkey rice until cooked through.
    6.
Scatter with fresh cilantro to serve.
