Instructions

    Chop the jalapeno, red bell pepper, and zucchini into bite-sized pieces. Heat the olive oil in a large stewing pot on high heat. Add the ground turkey and brown, breaking it up with a spatula.

    Stir in the jalapeno, bell pepper, and zucchini. Cover the pot with a lid and cook on low heat for about 5 minutes, until the vegetables are tender.

    Add all of the seasonings to the pot. Pour in the chicken broth and stir to coat all ingredients evenly with the spices.

    Cover the pot again and bring the chili to a strong simmer. Simmer for about 10 minutes. Then, stir in the cauliflower rice. Leave the lid off and keep the heat at a low simmer.

    Remove about ½ cup of liquid from the pot and transfer it to a clean bowl. Stir the sour cream into the liquid until smooth.
    6.
    Gently stir the thickened sour cream mixture back into the pot of chili. Stir well and let the chili simmer for about another 5 minutes to allow the liquid to reduce and thicken further.
    7.
    Fill three bowls with 1 cup of chili each. Top each bowl with 2 tablespoons of cheddar cheese. Enjoy!
