Instead of bread, a delicately crisp mozzarella shell encases a creamy, savory filling. The shell offers a delightful textural contrast to the soft, flavorful center, providing a satisfying crunch with every bite.

Inside, flakes of tender tuna mingle with a tangy mayonnaise, creating a rich and comforting base. The addition of finely diced pickle provides a welcome burst of acidity and crunch, cutting through the richness and adding complexity to the flavor profile. Sharp cheddar cheese, melted to gooey perfection, binds all the ingredients together, lending a delightful sharpness and savory depth.

A subtle hint of celery adds a touch of freshness and vegetal notes, enhancing the overall aroma and balancing the other flavors. The celery's delicate crunch complements the other textures, creating a harmonious and well-rounded culinary experience. These tuna melt pockets are more than just a snack; they're a delightful culinary adventure.

The combination of textures and flavors is both familiar and exciting, making them a perfect choice for a light lunch, an afternoon treat, or even a unique appetizer to impress your guests. Instructions

    1.
Preheat an oven to 325 degrees Fahrenheit (163 degrees Celsius) and line a baking sheet with parchment paper. In a mixing bowl, combine half a can of drained tuna with mayonnaise, salt, pepper, celery seed, cheddar cheese, and finely diced pickle (approximately 1 small gherkin). Mix well and set aside.
    2.
Lay the mozzarella cheese slices on the prepared baking sheet, ensuring they are not overlapping. Place the tray in the preheated oven and melt the cheese for approximately 4 minutes. The cheese should be melted but still retain its shape.
    3.
Divide the tuna filling into 4 equal portions. Set each portion near one corner of each mozzarella slice, slightly off-center.
    4.
Once the cheese is cool enough to handle, use a spatula to carefully fold the farthest corner of each cheese slice over its filling, forming a triangle. Fold the wide corners of each triangle pocket inwards to help seal the filling inside.
    5.
Place the tray back in the oven and bake for 10-15 minutes, checking frequently. Bake until the edges and tops of each pocket are golden and crispy. For a fully crispy pocket, you may bake longer, but monitor closely to prevent burning.
