Instructions

    Combine the peanut butter and half the coconut oil in a mixing bowl, then add half of the xylitol. Beat until smooth.

    Line a muffin tray with 6 cupcake cases. Distribute the peanut mixture evenly among the cases. Freeze for 10 minutes to set.

    While the peanut layer is setting, mix the remaining coconut oil, coconut butter, shredded coconut, remaining xylitol, and lime zest in a bowl. Beat until smooth and creamy.

    Remove the set peanut cups from the freezer. Divide the coconut mixture evenly among the 6 cups, creating a layer over the peanut mixture. Grate lime zest over the tops.

    Return to the freezer for 30 minutes to fully set. Remove 5-10 minutes before serving.
