Description

Imagine tender, seasoned chicken, slow-cooked to perfection in a rich tomato and basil sauce. This dish begins with chunks of chicken, generously seasoned and then gently simmered in a slow cooker with ripe, juicy tomatoes and fragrant whole basil leaves. The extended cooking time allows the flavors to meld and deepen, creating a hearty and satisfying stew.

The chicken becomes incredibly tender, practically melting in your mouth, while the tomatoes break down to form a luscious, flavorful sauce that clings beautifully to every piece. The basil infuses the dish with a subtle sweetness and aromatic complexity, adding a touch of freshness that balances the richness of the tomatoes and chicken. To complement the savory chicken and tomato stew, pair it with a simple yet elegant side of garlic butter noodles.

These delicate noodles, with their almost translucent appearance, offer a unique texture that is both light and satisfying. They are quickly sautéed in a fragrant garlic butter, allowing them to absorb the rich, savory flavors. The garlic butter adds a touch of warmth and depth, creating a delightful contrast to the bright, tangy tomato sauce.

A final drizzle of golden extra virgin olive oil enhances the flavors and adds a touch of luxuriousness. For an extra layer of flavor, consider adding a sprinkle of freshly grated parmesan cheese or a scattering of chopped fresh basil to the noodles just before serving. The parmesan adds a salty, umami note that complements the garlic butter, while the extra basil provides a burst of freshness that elevates the entire dish.

This versatile meal is perfect for both meal prepping and easy weeknight dinners. Its simple preparation and hands-off cooking method make it ideal for busy individuals or families. Prepare the chicken and tomato stew in advance and store it in meal prep containers for convenient lunches or dinners throughout the week.

The garlic butter noodles can also be made in bulk and stored separately, ready to be reheated and enjoyed whenever you desire. Whether enjoyed as a quick and easy weeknight meal or as part of a carefully planned meal prep strategy, this slow-cooked chicken and tomato stew with garlic butter noodles is sure to delight both adults and children alike. Serve it family-style at the dinner table and watch as everyone savors the comforting flavors and satisfying textures of this delicious and wholesome dish.

Instructions

    1.
Prepare the tomato basil chicken either early in the day or before going to work. Start by patting whole chicken breasts dry with a paper towel. Cut the chicken breast into 1-2-bite pieces and add to a mixing bowl. Mix the chicken with the salt, pepper, onion powder, italian seasoning, and olive oil. If there are any additional seasonings you want to add to taste, do so now.
    2.
Pour the seasoned chicken pieces in the base of a Crock Pot. Cut your tomatoes into halves or quarters, and place the tomatoes over the chicken. Add whole basil leaves to the top of the ingredients. If you don have grape tomatoes, you can substitute with any type of tomato. Cherry tomatoes, Roma, Plum, or Heirloom are all acceptable substitutions.
    3.
Cook the tomato basil chicken on high heat for 4 hours. You can also cook on low heat for 8 hours. After cooking, stir all the ingredients together with a large spoon. The tomatoes will naturally fall apart as you stir the chicken together. Keep the tomato basil chicken warm in the Crock Pot for serving or portion into meal prep containers.
    4.
When the chicken is near done cooking, you can prepare the buttered garlic noodles. Drain the shirataki noodles and rinse them clean in a colander. While the noodles are draining, melt the butter in a pot over low heat on the stove. Add minced garlic to the melted butter and let it cook until the garlic starts to turn golden.
    5.
Add the drained shirataki noodles to the warm garlic butter. You can turn the heat up slightly to bring the pot to a simmer. Let all excess water evaporate from the noodles as they soak up the garlic butter flavor. Remove the pot from the heat once the liquid is all evaporated. Stir the extra virgin olive oil into the noodles to lubricate them and serve about 3 ounces of cooked noodles with each serving of chicken.
