    Preheat oven to 300 degrees. Arrange Keto bread slices on a sheet tray (approximately 1 slice per serving) and bake for 30 minutes, or until lightly toasted. Let cool, then cut into cubes. Rearrange the cubes on the sheet tray and bake for another 10 minutes, or until golden and firm throughout, creating Keto croutons.

    In a large mixing bowl, add ½ cup of Keto croutons per serving. Toss with extra virgin olive oil, then season with salt and pepper until well coated. Dice celery, chop spinach and pecans, and add to the bowl. Toss all ingredients together until evenly mixed.

    In a stand mixer fitted with a paddle attachment, blend chopped butter until creamy and smooth. Scrape down the bowl and continue mixing to remove lumps. Add minced garlic, Italian seasoning, oregano, and rosemary. Blend until a smooth herb butter forms. Pour the stuffing mixture into the mixer and use a spatula to gently fold the ingredients together until everything is coated in herb butter.

    Stuff your turkey with the stuffing and cook as desired. Alternatively, for a separate stuffing dish, preheat oven to 350 degrees. Spray a baking dish with pan spray and transfer the stuffing, packing it down.
