Instructions

    Wipe clean the mushrooms and thickly slice. Thinly slice the garlic. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the mushrooms and garlic and pan-fry for 6-7 minutes until the garlic is tender and the mushrooms are golden. If there is a lot of liquid in your pan, drain it off once the mushrooms are cooked through.

    While the mushrooms are cooking, prepare the dressing. Add the remaining olive oil to a small bowl along with the tahini and lemon juice. Season with salt and pepper and whisk to combine until smooth. You may adjust seasonings and add more or less lemon and tahini as preferred.

    Remove the mushrooms from the heat and drizzle over the tahini dressing. Toss to combine. Scatter with chopped fresh parsley to serve.
