Description

These quickly prepared mushrooms offer a delightful combination of savory and umami flavors, making them a versatile side dish or topping. Sliced and pan-fried until perfectly tender, the mushrooms develop a pleasant, slightly chewy texture that contrasts beautifully with their rich taste. The simple cooking method allows the natural earthiness of the mushrooms to shine through, creating a satisfying foundation for the vibrant marinade.

The mushrooms are coated in a carefully balanced marinade of tomato paste, sesame oil, a hint of sweetness, and a splash of tamari sauce, all brightened with a touch of lime. This flavorful blend penetrates the mushrooms, infusing them with a depth of savory notes and a subtle tanginess that awakens the palate. The addition of fresh cilantro and scallions provides a refreshing herbal finish, adding a pop of color and aroma that elevates the dish.

The bright herbs cut through the richness of the marinade, creating a harmonious balance of flavors and textures. These mushrooms are incredibly adaptable and pair well with a variety of meals. Their Asian-inspired flavors make them a natural complement to stir-fries, noodle dishes, or grilled meats.

They can also be served as a topping for steaks, pork chops, or even used to enhance the flavor of omelets or frittatas. Whether served as a side or a main course component, these mushrooms are sure to be a crowd-pleaser. Their simplicity and deliciousness make them a welcome addition to any meal.

This recipe uses cremini mushrooms. However, white button or other firm varieties of mushrooms also work well. Slice the mushrooms thickly to maintain their texture during cooking.

Adjust cooking times as needed depending on the type of mushroom used.

Instructions

    1.
Add the tomato paste, sesame oil, tamari, lakanto, lime juice and olive oil to a small bowl. Whisk to combine until smooth. You may adjust the seasonings as desired to taste. You may also use an alternative low carb sweetener if preferred.
    2.
Thickly slice the mushrooms. Heat the olive oil in a skillet over a medium heat. Add the sliced mushrooms and pan fry until browned all over.
    3.
Add the prepared sauce mixture to the skillet. Stir well to combine, coating the mushrooms evenly in the sauce. Cook for a few minutes more until the sauce has reduced right down to a glaze and the mushrooms are hot through.
    4.
Roughly chop the scallions and cilantro. Scatter over the cooked mushrooms. Serve warm with your preferred Keto mains.
