Description

This meatloaf recipe draws inspiration from the beloved flavors of Swedish meatballs, offering a comforting and satisfying meal with a delightful twist. Ground meat, carefully seasoned with a blend of aromatic spices, forms the base of this hearty dish. What sets this meatloaf apart is the incorporation of freshly grated cauliflower, which replaces traditional breadcrumbs.

This clever substitution not only enhances the meatloaf's tenderness but also adds a subtle sweetness that complements the savory meat. The result is a moist and flavorful meatloaf with a wonderfully dense yet yielding texture. The meatloaf itself is a symphony of flavors, with hints of onion, garlic, and allspice dancing on the palate.

Each slice is a testament to the simple yet elegant combination of ingredients, creating a deeply satisfying experience. Its aroma fills the kitchen as it bakes, promising a comforting and wholesome meal. To elevate the dish further, a luscious cream sauce accompanies the meatloaf.

Lightly seasoned and exquisitely smooth, the sauce drapes the meatloaf in a blanket of rich flavor. The creamy texture contrasts beautifully with the firm meatloaf, creating a harmonious balance that is simply irresistible. A touch of nutmeg adds a warm, nutty note to the sauce, enhancing its overall appeal.

The sauce is easy to prepare and its subtle flavors complement the meatloaf without overpowering it. Whether served as a weeknight family dinner or a special occasion centerpiece, this Swedish-inspired meatloaf is sure to impress. Its comforting flavors and satisfying texture make it a crowd-pleaser, while its ease of preparation makes it a convenient choice for busy cooks.

Serve it with a side of roasted vegetables or mashed potatoes to complete the meal. Each bite of this meatloaf, paired with the creamy sauce, is a journey of flavors and textures, reminiscent of traditional Swedish comfort food. It's a delicious and nourishing meal that brings people together.

Instructions

    1.
Preheat an oven to 375 degrees. In a bowl, combine the ground beef, pork, first amount of salt, pepper, allspice, nutmeg, onion powder, egg, parmesan, and cauliflower rice. For the cauliflower rice, it ’s important to use fresh cauliflower (not frozen). Either grate the cauliflower or pulse in a food processor and squeeze out any excess liquid before adding to your meatloaf mixture.
    2.
Press the meatloaf mix into a loaf pan. Use a toothpick to poke 5-6 holes in the loaf to help avoid excess shrinking when baking.
    3.
Cover the top of the pan in foil and bake for 30 minutes. Then, remove the foil and bake uncovered for an additional 40 minutes. Set aside to cool once done. You may wish to drain away some excess fat that may build up, due to the pork.
    4.
During the final round of baking, make the cream sauce. Heat the heavy cream in a small pan over low heat. Then, melt in the provolone cheese, whisking until fully melted. Once the sauce has thickened, stir in the remaining salt and sage. Set the pan aside to cool and thicken until serving time.
    5.
Once the meatloaf has cooled for serving, slice it into 8 slices. Transfer each slice to a serving tray and spoon the sauce over the meatloaf. This recipe happens to be garnished with an additional sprinkling of nutmeg and fresh parsley!
