Instructions

    Peel the outer skin from the cucumber and discard. Peel the cucumber flesh into 8 wide strips.

    Add the cream cheese, 1 small garlic clove, the sundried tomatoes, parsley, lemon zest, salt and pepper to a food processor. Blend to form a semi smooth paste.

    Divide the cream cheese mixture between the cucumber strips, filling the center of each lengthwise.

    Carefully roll each strip of cucumber up around the filling to create your pinwheels. Refrigerate until ready to serve.
