Description

Imagine sinking your teeth into a cloud – that's the sensation these delicate, small cookies evoke. Their tender crumb, enriched with cream cheese, creates a melt-in-your-mouth experience that's simply irresistible. The subtle tang of the cream cheese perfectly balances the sweetness, preventing them from becoming cloying and adding a depth of flavor that lingers on the palate.

Each cookie is generously adorned with a vibrant slice of fresh strawberry, a jewel-toned crown that not only adds visual appeal but also bursts with juicy, summery flavor. The slight tartness of the strawberry provides a delightful contrast to the creamy sweetness of the cookie base, creating a harmonious blend of tastes that dance on your tongue. The strawberries also contribute a soft, yielding texture that complements the tender crumb of the cookie.

These cookies are a delightful treat any time of day. Enjoy them as a light dessert after a meal, a sweet snack with your afternoon tea, or even as a special addition to a brunch spread. Their petite size makes them perfect for sharing, but be warned – you might find yourself wanting to keep them all to yourself!

The combination of vanilla and coconut flour infuses the cookies with a subtle, fragrant aroma that is both comforting and inviting. The vanilla adds a warm, classic sweetness, while the coconut flour lends a delicate, slightly exotic note that elevates the flavor profile. The texture of the coconut flour also contributes to the cookie's tender crumb, creating a truly exceptional eating experience.

These little bites are more than just cookies; they're an experience, a moment of pure indulgence that will leave you wanting more. Their simplicity is their strength, highlighting the quality of the ingredients and the care that goes into each perfectly formed bite.

Instructions

    1.
In a stand mixer with a paddle attachment, cream together the cream cheese, butter, and stevia until you have a creamy, lump-free batter.
    2.
Mix in the egg white and vanilla, ensuring there are no lumps.
    3.
Mix in the coconut flour and baking powder until you have a fairly sticky but workable batter.
    4.
Transfer the batter to parchment or wax paper. Use the paper to roll the batter into a rectangular log (or a round log if you prefer), about 8 inches long. Wrap the log and freeze for 30 minutes.
    5.
While the cookie log is setting, prepare 16 slices of strawberry. Pat them dry with a paper towel and let them air dry. Preheat oven to 350 degrees Fahrenheit.
    6.
After the cookie log has set, slice it into 16, ½-inch thick cookies. Place them on a baking sheet lined with parchment paper. Bake for 8 minutes (without strawberries).
    7.
After the first bake, gently press a strawberry slice into each cookie. If cracks appear, gently press the edges back together. Don’t push the strawberries too hard.
    8.
Bake for a final 10 minutes. Let the cookies cool completely before eating. Store cooled cookies in an airtight container in the refrigerator.
