Instructions

    1.
    Lay out the skirt steak flat and cut it into manageable pieces, if necessary. Season with salt, pepper, onion powder, garlic powder, and paprika.

    Heat olive oil in a large skillet over high heat. Cook the steak for 7-8 minutes per side, until medium-well to well done. You may slightly undercook it, as it will finish in the oven. Set aside to rest.

    Preheat oven to 375 degrees. In a bowl, whisk together eggs, cream, salt, and pepper. Set aside.
    4.
    Spray a 9x13 baking dish with pan spray. Chop the steak into bite-sized pieces and arrange in the dish. Dice red bell pepper and sprinkle on top. Follow with cheddar and mozzarella cheeses.
    5.
    Pour the egg batter over the casserole. Bake in the oven for 20 minutes. While baking, cook bacon strips until crisp. Cool and chop the bacon into bits.
    6.
    After 20 minutes, remove the casserole and reduce oven to 350 degrees. Sprinkle bacon bits on top and bake for a final 10 minutes, or until the egg is set. Slice into 6 servings.
