    In a bowl, combine the canned tuna, mayo, sriracha, and lemon juice. Use a fork to break up the tuna and mix until well combined. Set aside.

    Remove the end of a medium carrot and peel the tough exterior. Use a vegetable peeler to create thin shreds of carrot. Set aside.

    Remove the ends of a cucumber (seedless is best), but leave the peel on. Use a vegetable peeler to peel thin, wide strips. Lay the strips flat on a clean surface, overlapping each piece halfway until you have enough to create a sheet the same length as a nori sheet (about 2 ounces).

    Press a paper towel against the arranged cucumber strips to remove excess moisture. Then, press a nori seaweed sheet flat against the cucumber.

    Use a spoon to arrange half of your tuna filling across the seaweed, leaving about a ½-inch space from all edges. Then, lay half of the peeled carrots along the tuna.

    Gently begin rolling the sushi by carefully pulling up the cucumber slices and tightly rolling them away from you. Use your fingers to tuck the roll into itself as you go. When you're done rolling, use a very sharp knife to slice the roll into approximately 6 pieces. Repeat these steps for a second sushi roll. Enjoy with freshly grated ginger!
