Description

This vibrant and zesty beef salad is a delightful explosion of flavors and textures, perfect for those who crave a dish with a bit of a kick. Thinly sliced, tender beef is the star, offering a satisfyingly rich and savory base that is then awakened by a symphony of fresh, crisp vegetables and a tangy, herbaceous dressing. Imagine sinking your teeth into the juicy beef, followed by the cool crunch of cucumber and the bright, clean taste of cilantro.

The heat comes from a carefully considered blend of spices and peppers, delivering a pleasant warmth that builds with each bite. The level of spice can be adjusted to your liking, making it a versatile dish that can be enjoyed by a wide range of palates. A squeeze of fresh lime juice adds a crucial element of brightness and acidity, cutting through the richness of the beef and unifying all the flavors in perfect harmony.

The lime also prevents oxidation. Visually, this salad is a feast for the eyes, with its vibrant mix of colors. The deep red of the beef contrasts beautifully with the bright green of the cucumber, cilantro, and other fresh herbs.

Instructions

    1.
The day before or at least 6 hours before making the salad, prepare the beef. Slice the beef into pieces and place in a ziploc bag. Combine with olive oil, rice vinegar, salt, pepper, chopped garlic, chili paste, and lime juice. Seal the bag and massage the marinade into the steak. Refrigerate overnight or for at least 6 hours.
    2.
In a large bowl, combine the spinach, coleslaw mix, cilantro, chopped serrano pepper, and diced cucumber.
    3.
Add the remaining dressing ingredients to the salad bowl and toss until everything is evenly coated. Arrange the salad on a serving plate.
    4.
Heat a small pan over high heat. Cook the steak with as much marinade as possible, squeezing it out of the bag. Cook on both sides for 2-3 minutes, or to your preferred doneness.
    5.
Arrange the cooked steak on top of the salad. Serve immediately with a fork and knife. Garnish with extra cilantro, lime wedges, or additional spices, if desired. Enjoy!
