    Add all of the butter to a pan over low/medium heat. Warm through until completely melted, being careful not to boil. The butter will begin to separate in the pan, a process that should take about 5-8 minutes.

    Skim any white froth off the surface of the butter. Carefully pour the yellow liquid butter into another pan, leaving any of the white milk fats behind. For a finer result, filter the butter by passing it through a fine cheesecloth or two layers of paper kitchen towel.

    Add the chili powder, cumin, coriander, and black pepper to the pan with the clarified butter. Stir well to combine, then add the shrimp and the zest of one lime wedge. Stir well to ensure the shrimp are coated in the spiced butter. Simmer gently for a minute or two, or until the shrimp are fully cooked. Remove from the heat.

    Using a slotted spoon, remove the shrimp from the spiced butter and divide them evenly between two small ramekins (or one larger ramekin).
