Instructions

    Melt the butter in a small saucepan. Add the Keto pancake mix to the saucepan. Stir well with a whisk.

    Switch to a spatula and slowly pour in the water. Stir well to incorporate the liquid. For a richer flavor, add nondairy milk or milk.

    Fold in the diced white onion, grated nutmeg, ham, and kosher salt. If using traditional Spanish ham, skip the additional salt. Also, try to use freshly grated nutmeg as the flavor is a lot cleaner.

    Form the dough into log-shaped croquetas. Sprinkle the smallest amount of pancake mix onto a plate and roll the croquetas in it to make sure they are not too sticky on the outside.

    Heat another small saucepan over medium heat. Add in 1 cup of avocado oil until the temperature reaches 375 F. Place 2-3 croquetas into the hot oil.
