Instructions

    Microwave the frozen cauliflower rice according to package instructions (about 4-4.5 minutes). Set aside. Cut the nori sheet into 6 equal strips.

    Place one nori strip on a plate, with most of it hanging off. Place the musubi mold on top of the nori strip. Fill the mold with 1/6 of the cauliflower rice and use the press to tamp it down gently. Prepare all 6 shaped cauliflower rice portions.

    Cut Spam into 6 equal slices. Place in a cold, large nonstick skillet over medium heat. Cook slowly until crispy (about 10 minutes on the first side). Reduce heat if browning too quickly.

    Flip the Spam and cook for 8-10 minutes on the second side. Combine soy sauce and sweetener in a small bowl. Once Spam is crispy, add the soy sauce mixture. Cook for 1-2 minutes, moving the Spam around until the sauce thickens and glazes the Spam.

    Place one piece of Spam on each of the cauliflower rice portions. Lift each nori sheet and lay it on top of the Spam, trim and tuck the edge underneath the cauliflower rice. Gently tuck the other end of nori to secure. Serve hot!
