Description

Imagine the comforting aroma of a hearty bake filling your kitchen, a promise of the deliciousness to come. This recipe brings together simple ingredients in a way that elevates them to something truly special. At its heart is flaky, tender cod, a mild and delicate canvas ready to absorb the rich flavors that surround it.

Think about the saltiness of thinly sliced ham, crisped to perfection in the oven, its savory notes permeating every bite. The subtle sharpness of brown mustard adds a welcome tang, cutting through the richness and adding a layer of complexity. Leeks, gently sautéed until softened and sweet, lend a delicate oniony fragrance that complements the other flavors beautifully.

A touch of garlic, just a hint, adds a warm and inviting depth. The beauty of this dish lies not only in its taste but also in its texture. The crispy, salty ham provides a delightful contrast to the soft, yielding cod.

The addition of vibrant green adds a touch of freshness and a pleasant chewiness that balances the overall experience. Imagine the golden-brown hue of the baked ham, the pearly white of the cod peeking through, and the bright green of the greens, all melding together in a visually appealing presentation. This is a dish that is both satisfying and elegant, perfect for a cozy weeknight dinner or a more formal gathering.

It's a celebration of simple ingredients, expertly combined to create a memorable culinary experience. Each bite offers a harmonious blend of flavors and textures, a testament to the power of thoughtful cooking. The flaky cod, the crispy ham, the tender greens, the sharp mustard, the fragrant leeks, and the subtle garlic all work together in perfect harmony, creating a symphony of taste that will leave you wanting more.

Prepare to be transported by the comforting and delicious flavors of this exceptional bake.

Instructions

    1.
Lay two small cod filets on a flat surface, seasoning them with the first amounts of salt and pepper; paprika; oregano; lemon pepper; and red pepper.
    2.
Wrap a slice of smoked cured ham around each filet, tucking the ends under the fish. Heat the olive oil in a pan on the stove over medium-high heat, and place the wrapped filets in the hot oil.
    3.
Sear the ham onto the fish on both sides, cooking for about 2 minutes per side to turn the ham a golden brown. Transfer the filets aside to rest before finishing them off in the oven later.
    4.
Preheat your oven to 350 degrees. In a mixing bowl, combine roughly chopped spinach and leeks (dark and white parts) with the second amounts of salt and pepper; garlic powder; brown mustard; and MELTED butter. Toss until the greens are completely coated.
    5.
Spray a seasoned sheet tray with pan spray and spread the spinach/leeks across the pan. Make small pockets for your cod filets and lay them gently in the spaces.
    6.
Bake the tray for 30 minutes. The fish will be cooked through with crisp edges, and the greens will be very wilted, fragrant, and slightly crispier around the edges of the pan. Enjoy!
