Description

Tandoori chicken is a vibrant and deeply flavorful roasted chicken dish with roots in India, celebrated across the globe. If you appreciate the rich tapestry of flavors found in Indian cuisine, such as butter chicken, this rendition is sure to become a cherished addition to your culinary repertoire. The key to its captivating taste lies in allowing the chicken to luxuriate in a marinade of aromatic spices and creamy yogurt.

This infusion process unfolds over several hours, tenderizing the chicken and allowing it to fully absorb the complex flavors before it is gently slow-cooked to succulent perfection, traditionally in a tandoor oven. Fortunately, the medley of spices required to create this masterpiece is readily available in most grocery stores. Should garam masala prove elusive, crafting your own blend is a simple endeavor, utilizing common pantry staples such as coriander, cumin, cardamom, and nutmeg.

Even more conveniently, your slow cooker can effectively replicate the gentle, consistent heat of a traditional tandoor oven. Once you experience the symphony of flavors that this dish offers, you'll discover a newfound appreciation for the transformative power of marinated roasted chicken. This tandoori chicken is exceptionally flavorful, yet it is light and can be accompanied with complimentary dishes.

Consider serving it with a side of cauliflower rice to capture the delectable, spiced juices released during the slow cooking process, creating a satisfying and wholesome meal. Alternatively, select your preferred vegetables to accompany this dish. The slow cooker or instant pot can be a great appliance when trying out new recipes.

Increase your favorite slow cooker recipe and prepare it on the weekend. Then, on Sunday morning, simply add the ingredients to the slow cooker and let it roast while you prepare your side dishes. This way, you'll spend less time on meal preparation!

Instructions

    1.
Pat whole chicken breasts dry with paper towels and cut into 3-4 manageable pieces. Create 6-8 slices in each chicken breast, about ¾ of the way through (don’t slice all the way through). Slice a large garlic clove into thin slices and arrange them between the slices of chicken evenly.
    2.
Place the chicken breasts in a ziploc bag or glass dish. Combine all the remaining ingredients into a spiced marinade. Pour the marinade over the chicken, ensuring it fills all the chicken slices and each breast is fully coated. Seal the chicken in its container airtight and marinate in your refrigerator for at least 4 hours, or preferably overnight.
    3.
After marinating, place the chicken in your slow cooker or crock pot and cook for 8 hours on low. After cooking, remove the chicken and gently pull apart the pre-cut slices. Serve the chicken with the natural juices from the slow cooker or discard them after cooking.
