Instructions

    1.
    Heat the olive oil in a large saucepan/Dutch oven over medium heat. Add the diced pork and cook until browned on all sides. Remove from the pan with a slotted spoon and set aside.

    Thinly slice the peppers, garlic, and scallions. Add to the pan used to cook the pork. Pan-fry over low/medium heat for a few minutes until tender and fragrant.

    Add the ground coriander, tomato paste, tamari sauce, and Lakanto syrup to the pan. Return the pork and stir well to combine. Adjust seasonings to taste.
    4.
    Add the chicken stock and stir well. Bring to a boil. Reduce to a simmer, cover, and cook gently for 1 hour. Uncover and cook for a further 15 minutes until the pork is very tender and the sauce is reduced. Serve with preferred Keto sides and top with chopped fresh cilantro.
