Instructions

    Thaw shrimp if frozen by placing them in a bowl and running cold water over them. Add half of the salt and 1/8 teaspoon of white pepper.

    Slice stems off mushrooms and trim woody ends from asparagus (10 oz weight after trimming). Snap the asparagus stem to determine where it breaks, then trim other ends to the same length. Cut asparagus into 2-inch pieces and slice mushrooms into 1/4-inch slices. Mince some ginger.

    Heat a large saute pan over medium-high heat until hot. Add 1 tablespoon of oil, then the drained shrimp. Stir-fry until shrimp turns pink. Drain excess water and transfer shrimp to a plate.

    Add 1/2 tablespoon of oil to the pan. Add ginger and mushrooms. Stir-fry for 2-3 minutes until mushrooms brown. Add 1 tablespoon of sherry wine to deglaze the pan.

    Add asparagus and cook for 1 minute until it begins to soften but is still crunchy. Add the remaining salt.
    6.
    Add the shrimp back to the pan. Add soy sauce and stir until combined, cooking for another minute. Remove from heat and serve hot.
