Description

Imagine sinking your teeth into a perfectly seared steak, the crust giving way to a tender, juicy interior. This simple yet elegant dish highlights the rich, savory flavor of high-quality beef. The key to achieving steakhouse perfection at home lies in a few crucial techniques that unlock the steak's full potential.

Before the steak even meets the pan, preparation is paramount. Patting the surface dry is essential for creating that coveted deep-brown crust. Moisture is the enemy of searing, as it steams the steak instead of allowing it to develop a flavorful exterior.

A dry surface ensures direct contact with the heat, resulting in a beautiful Maillard reaction – the chemical process responsible for the complex flavors and appealing color. The choice of cut is yours, each offering a unique texture and flavor profile. While this recipe features sirloin, known for its balance of flavor and tenderness, other cuts like strip steak deliver a more robust, beefy taste, while ribeye boasts a rich marbling that melts into the meat during cooking, creating an incredibly succulent experience.

Tenderloin, the most tender cut, offers a buttery smooth texture and delicate flavor. As the steak sears, the aroma fills the kitchen, a tantalizing preview of the culinary delight to come. The sizzling sound is music to a steak lover's ears, promising a deeply satisfying meal.

A generous knob of butter, melted in the pan, adds richness and helps to create a glossy, flavorful crust. The butter, infused with the steak's juices, can be spooned over the steak during the final moments of cooking, basting it in its own savory essence. Once the steak reaches your desired level of doneness, a brief rest is essential.

Allowing the steak to rest allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak. A sprinkle of coarse sea salt and freshly cracked black pepper is all that's needed to enhance the steak's natural flavors. Serve it alongside your favorite sides for a complete and unforgettable meal.

Whether it's creamy mashed potatoes, roasted vegetables, or a simple green salad, a perfectly seared steak is the star of any plate.

Instructions

    1.
Heat Tbsp. of butter over medium-high heat.
    2.
Season the steak with salt on both sides. Once the butter is melted and hot, place the steak in the pan. Allow the steak to sear for 1 minute.
    3.
Flip over and sear on the other side. Transfer the pan to a 350 degree oven for 3-5 minutes, depending on the thickness of the steak.
    4.
While the steak is cooking, grate the garlic. Slightly melt the remaining tablespoon of butter until just soft, then add in the Italian seasoning and grated garlic. Wrap the butter in parchment or plastic wrap and chill in the freezer.
    5.
Remove the steak from the oven when it reaches your desired doneness. Allow to rest for 15 minutes before slicing. Remove the butter from the freezer and cut into slices or cut into pieces and roll into small balls. Place the butter pieces on top of the steak and enjoy!
