Instructions

    Preheat oven to 350°F (175°C). Line a muffin tin with silicone or paper cupcake liners. Bring a medium saucepan of water to a boil. Gently add 6 large eggs to the boiling water and set a timer for 7 minutes.

    After 7 minutes, drain the boiling water and immediately cover the eggs with ice and cold water. Let them chill until cold, then peel under a thin stream of cold water.

    In a food processor, pulse together coconut flour, sea salt, baking powder, coconut oil, and sweetener until combined.

    Add the remaining 5 eggs, garlic powder, and onion powder to the food processor and pulse again until well combined.

    Pour the batter into a medium mixing bowl and stir in the chopped scallions. Let the mixture sit for about 5 minutes to allow the batter to thicken.

    Evenly scoop the batter into 6 mounds in the prepared muffin tin using an ice cream scoop.

    Place a peeled hard-boiled egg into the center of each batter mound, gently forming the dough around the egg.
