Description

Imagine a warm, comforting dish that captures the essence of autumn and winter holidays, without the heaviness of traditional stuffing. This grain-free creation is a delightful medley of flavors and textures, designed to complement your favorite holiday meals or stand alone as a satisfying main course. The foundation of this stuffing lies in a carefully selected blend of low-carbohydrate vegetables.

Earthy mushrooms mingle with crisp celery, creating a savory base that is both aromatic and deeply flavorful. These vegetables are sautéed to perfection, releasing their natural sweetness and creating a depth of flavor that will tantalize your taste buds. To mimic the familiar texture of classic stuffing, finely ground almonds are incorporated, providing a delicate crumb and a subtle nutty note.

The almonds add a richness that perfectly complements the vegetables, creating a harmonious balance of flavors. Eggs bind the ingredients together, lending a moist and tender quality to the stuffing. The beauty of this grain-free stuffing lies in its versatility.

It can be served as a hearty side dish alongside roasted turkey, chicken, or ham, adding a touch of elegance to your holiday table. Alternatively, it can be enjoyed as a satisfying main course, paired with a fresh green salad or roasted vegetables. The possibilities are endless!

Each bite offers a delightful combination of textures – the slight chewiness of the mushrooms, the gentle crunch of the celery, and the soft, yielding crumb of the almond flour. The flavors are equally captivating, with the earthy vegetables, nutty almonds, and savory herbs creating a symphony of tastes that will leave you wanting more. It's a dish that satisfies your cravings while keeping your health goals in mind.

Whether you're following a specific diet or simply looking for a lighter alternative to traditional stuffing, this grain-free version is sure to become a new favorite.

Instructions

    1.
Preheat the oven to 350 degrees. Cook the bacon until crispy, either on the stovetop or in the oven. Roughly chop the bacon and set aside, reserving the bacon fat in the pan.
    2.
Melt the butter in the pan with the bacon fat over medium heat. Mince the garlic and add it to the pan, stirring briefly. Add the ground pork and half of the thyme. Sauté for a few minutes until the pork is almost cooked.
    3.
As the pork begins to brown, chop the celery and add it to the pan. Slice the mushrooms and add them to the pan along with the remaining thyme, salt, and pepper. Cook until the meat is browned, then add the water/broth and stir for a couple of minutes until the mushrooms soften. Remove from heat and let cool slightly.
    4.
While the pan is cooling, preheat the oven to 350 degrees. Whisk an egg in a bowl and whisk in 2 tablespoons of almond flour. Pour the egg mixture into the pan with the slightly cooled stuffing mixture and mix well.
    5.
In a separate small bowl, melt the remaining ½ tablespoon of butter and mix in the remaining tablespoon of almond flour. Mince the pecans and add them to the bowl.
    6.
Pour the stuffing mixture into a greased baking dish. Crumble the butter and nut mixture evenly on top of the stuffing.
    7.
Bake at 350 degrees for 30-35 minutes, or until the top of the stuffing is bubbly and golden brown. Let cool for a few minutes before serving.
