Instructions

    Soften cream cheese at room temperature. Whip the softened cream cheese in a stand mixer or food processor until smooth and pliable. Add Dijon mustard, minced chives, and paprika to the cream cheese and whip until well combined.

    On a sheet of parchment paper, create rows of salami slices, overlapping each piece by about 1/3. Build the second row, slightly overlapping the previous one. Continue until all salami slices are used.

    Spread the cream cheese spread evenly over the layered salami, leaving about 1/2-inch of empty space around the edges. Sprinkle diced pimentos and diced gherkin pickles over the cream cheese layer. Refrigerate to chill and set the cream cheese.

    Use the parchment paper to gently lift the edges of the salami and begin rolling tightly. Tuck the last edge of salami under the roll. For easier slicing, chill the full roll again to set it. Cut the cold salami roll into 8 pinwheel pieces. Serve chilled.
