Instructions

    Preheat your oven to 350°F (175°C). Line a baking sheet with a silicone mat and generously spray it with non-stick cooking spray. In a mixing bowl, combine the almond flour, ground flax seeds, eggs, fresh rosemary, and sea salt.

    Allow the mixture to sit for 5 minutes. This allows the flax seeds to absorb some of the moisture, which helps bind the dough together.

    Place the dough onto the prepared silicone mat. Spray another silicone mat liberally with non-stick cooking spray and place it on top of the dough.

    Using a rolling pin, roll the dough out as thinly as possible, spreading it to the edges of the baking sheet. Occasionally remove the top silicone mat to spray with more cooking spray during the rolling process to prevent sticking. If silicone mats are unavailable, parchment paper can be used as an alternative.

    Remove the top silicone mat and use a knife or pizza cutter to cut the dough into approximately 1 ½" by 1 ½" squares. Sprinkle with additional sea salt to taste for added flavor and texture.

    Bake in the preheated oven for 20 minutes, or until the crackers are golden brown and crisp. Remove from the oven and let them cool slightly until they are cool enough to handle. Break the crackers apart along the cut lines. Turn off the oven and place the crackers back inside as it cools down to further crisp and dry them.
