Description

Imagine a dish that sings with the vibrant flavors of the Mediterranean. This recipe features tender chicken breasts embraced by a luscious, intensely flavored sauce, drawing inspiration from the classic puttanesca. The sauce begins with a base of rich, sweet tomatoes, slowly simmered to coax out their depth of flavor.

Garlic, infused into olive oil, provides a pungent foundation, its aroma filling the kitchen with anticipation. Anchovies, those tiny powerhouses of umami, melt into the sauce, lending a salty, savory complexity that elevates the dish beyond the ordinary, and don't worry, you won't taste 'fishy'. The briny tang of olives and the piquant burst of capers punctuate the sauce, adding layers of texture and intrigue.

A generous pinch of red pepper flakes introduces a pleasant warmth, a subtle undercurrent of heat that dances on the palate. Dried oregano, with its earthy, slightly bitter notes, contributes an herbaceous aroma that ties all the elements together. The chicken breasts, seasoned simply with salt, pepper, and perhaps a touch of paprika, are pan-seared to golden perfection, their surfaces developing a beautiful crust that seals in their natural juices.

The result is chicken that remains moist and succulent, ready to absorb the vibrant flavors of the sauce. Once the sauce has reached its full potential, a harmonious balance of sweet, salty, and savory, it's ready to meet the chicken. Spooned generously over the seared breasts, the sauce clings beautifully, each bite offering a burst of Mediterranean sunshine.

The combination is both comforting and exciting, familiar yet unique. Garnish with a sprinkle of fresh parsley or basil for a final touch of freshness and visual appeal. Serve this dish with a side of zucchini noodles or cauliflower rice to capture every last drop of the flavorful sauce, or enjoy it alongside a simple salad for a light yet satisfying meal.

It's a dish that's equally at home on a casual weeknight or a more special occasion, a testament to the power of simple ingredients transformed into something truly extraordinary.

Instructions

    1.
Make the Puttanesca sauce by melting the butter in a pan over low heat. Stir in the minced garlic and sliced anchovies and let them turn golden and fragrant (about 2 minutes).
    2.
Stir in the diced tomatoes, chopped green olives, capers, and red pepper flakes. Cook over low heat for about 5 minutes.
    3.
Stir the cream into the pan and simmer over low heat until the sauce has thickened.
    4.
Preheat an oven to 375 degrees. Lay the chicken breasts in a glass baking dish lined with pan spray. Season the chicken with salt, pepper, Italian seasoning, and onion powder.
    5.
Spoon equal amounts of Puttanesca sauce over each chicken breast. Cover the tray with foil and bake for 25 minutes. Pull the dish out of the oven and sprinkle mozzarella on top of each chicken breast.
    6.
Leave the dish uncovered and bake for an extra 15 minutes. Serve hot.
