Description

Imagine a curry that whispers of warmth and exotic lands, a dish where tender pieces of pork swim in a luxurious, creamy embrace. This is a curry designed to delight the senses, built upon a foundation of deeply satisfying flavors. The broth itself is a masterpiece, a velvety river of coconut milk enriched with the subtle, nutty notes of peanuts.

It’s a combination that's both comforting and intriguing, a delicate dance between sweet and savory. But the true heart of this curry lies in its spice profile. A symphony of aromatic seasonings infuses every morsel of pork, creating layers of flavor that unfold with each bite.

You'll detect the gentle warmth of ginger, the earthy perfume of cumin, and perhaps a whisper of chili, adding just a touch of heat to awaken the palate. The spices aren't overpowering; instead, they work in harmony, enhancing the natural sweetness of the coconut milk and complementing the richness of the pork. The pork itself is cooked to succulent perfection, yielding easily to the touch and melting in your mouth.

Each piece is infused with the fragrant broth, ensuring that every bite is an explosion of flavor. The texture is key here: the tender pork provides a delightful contrast to the smooth, creamy sauce. Served over a bed of cauliflower rice, this curry transforms into a complete and nourishing meal.

The cauliflower rice acts as a blank canvas, allowing the vibrant flavors of the curry to truly shine. Alternatively, try it with zucchini noodles for a lighter, more refreshing option. The zucchini noodles offer a subtle sweetness and a pleasant bite that complements the richness of the sauce.

This pork curry is more than just a meal; it's an experience. It's an invitation to slow down, savor each bite, and appreciate the complex interplay of flavors and textures. It’s a dish that's perfect for a cozy night in, a celebratory dinner with friends, or any occasion that calls for a touch of culinary magic.

The aroma alone is enough to transport you to a faraway place, filling your kitchen with the enticing scents of spice and coconut. Prepare to be captivated by the irresistible allure of this creamy, dreamy pork curry.

Instructions

    1.
Dice the pork loins into bite-sized chunks. Heat the coconut oil in a large pan over medium heat. Add the pork and cook until browned on all sides. Remove from the pan with a slotted spoon, keep warm, and set aside.
    2.
Finely chop the shallot and chili. Thinly slice the garlic and grate the ginger. Add these to the pan along with the lime zest and lime leaves. Cook gently over low/medium heat until fragrant and tender.
    3.
Add the stock and bring to a boil.
    4.
Return the pork to the pan and reduce to a simmer.
    5.
Whisk together the lime juice, coconut milk, and peanut butter until smooth.
    6.
Pour the coconut and peanut mixture into the pan, stir well, and continue to simmer for 20 minutes or until the pork is completely cooked through and the sauce has reduced and thickened slightly.
    7.
Scatter with sliced scallions and fresh cilantro. Remove lime leaves before serving.
