Instructions

    1.
    Heat the olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the pan, cooking through until golden. Remove from the pan with a slotted spoon and set to one side.

    Whilst the bacon is cooking, trim the tough bases from the sprouts and discard. Thinly slice the sprouts then add to the skillet that cooked the bacon, along with the capers, lemon juice, zest, salt and pepper. Stir well to combine and cook for 3-4 minutes over a medium heat until starting to brown and crisp at the edges.

    Add the bacon and stir well.

    Scatter the hot sprouts and bacon with the Parmesan shavings to serve.
