Description

Experience the delight of this orange chicken, a flavorful and lighter take on a classic favorite. This dish transforms ordinary chicken into something extraordinary, perfect for those seeking a balance of taste and mindful eating. At the heart of this recipe lies succulent white meat chicken, each piece carefully enveloped in a delicate egg white batter.

This creates a wonderfully crisp and airy coating when fried. The result is a satisfying texture that enhances the overall eating experience, providing a delightful crunch with every bite. The true star is the homemade orange sauce, a vibrant blend of tangy and sweet notes.

Freshly squeezed orange juice forms the base, capturing the essence of citrus. A carefully selected sweetener adds a touch of sweetness, complementing the orange's natural zest without any unnecessary carbohydrates. The sauce's glossy texture clings beautifully to the chicken, ensuring each piece is infused with flavor.

The beauty of this dish lies in its versatility. Serve it alongside your preferred healthy sides, such as cauliflower rice for a grain-free option, grilled vegetables for added nutrients and vibrant color, or shirataki noodles for a light and unique pairing. Each combination offers a delightful culinary adventure, allowing you to tailor your meal to your specific tastes and dietary needs.

This orange chicken is not only a joy to eat but also a practical choice for meal prepping. Prepare a batch in advance and store it in the refrigerator for up to 5 days, ensuring a delicious and convenient meal is always within reach. Instructions

    1.
In a small saucepan, combine chicken broth, fresh orange juice, soy sauce, liquid stevia, red pepper flakes, and sesame seeds. Heat over medium heat until simmering. Remove 1/4 cup of the liquid and whisk in paleo flour until dissolved. Slowly pour the thickened liquid back into the saucepan while stirring continuously.
    2.
Continue stirring the sauce over medium heat until it reduces and thickens. Add butter to the saucepan and stir until melted, creating a rich, buttery sauce. The sauce is ready when it coats the back of a spoon. Set aside to cool.
    3.
Pat the chicken dry with paper towels and cut it into bite-sized pieces (approximately 2x1.5 inches). Season the chicken with salt, pepper, onion powder, garlic powder, and ginger powder. Set aside.
    4.
In a wok or non-stick frying pan, heat avocado oil to about 2 inches deep over medium-high heat. While the oil is heating, whip the egg white in a stand mixer on high speed until medium-stiff peaks form.
    5.
Gently fold the whipped egg white into the bowl of seasoned chicken until the pieces are evenly coated. One by one, use tongs to drop the battered chicken pieces into the hot avocado oil. Fry for 2-3 minutes on each side, or until golden brown and crispy. Flip as needed to ensure even cooking. Transfer the cooked chicken to a plate lined with paper towels to drain excess oil.
    6.
Transfer the fried chicken to a large, clean mixing bowl. Pour the cooled orange sauce over the chicken and gently fold until all pieces are evenly coated. Garnish with chopped green onion, extra sesame seeds, or zested orange rind, if desired. Store the cooled orange chicken in an airtight container in the refrigerator for up to 5 days.
