Description

Imagine biting into a warm, fragrant fritter, its crispy exterior giving way to a tender, flavorful interior. That's the experience of these delectable onion fritters. Thinly sliced onions, sweet and yielding, are the heart of this dish.

They're generously combined with a vibrant blend of aromatic spices, each contributing its unique note to the symphony of flavors. Turmeric lends its warm, earthy hue and subtle bitterness, while cumin adds a smoky depth. Coriander brings a bright, citrusy note, perfectly complementing the sharpness of the onion.

A touch of chili provides a gentle warmth, awakening the palate without overwhelming it. The spiced onion mixture is then enveloped in a delicate almond-based batter. This coating, lighter than traditional wheat-based batters, creates a beautifully crisp and golden crust when pan-fried.

The fritters sizzle in the pan, releasing their enticing aroma, until they reach a perfect state of golden-brown perfection. The almond batter provides a subtle nutty flavor that enhances the overall taste experience. These onion fritters are incredibly versatile.

They make a wonderful side dish, adding a touch of exotic flair to any meal. They're particularly delightful alongside curries, where their crispy texture and flavorful spices provide a welcome contrast to the richness of the sauce. Alternatively, they can be enjoyed as a satisfying snack or appetizer.

Serve them with a cooling yogurt-based dipping sauce, such as raita, to balance the warmth of the spices and add a refreshing element. A sprinkle of fresh cilantro or a squeeze of lime juice can further enhance the flavors. These onion fritters are best enjoyed fresh and warm, when their crispy exterior and tender interior are at their peak.

Their aromatic spices and delicate batter make them a truly irresistible treat, perfect for sharing with friends and family or savoring on your own.

Instructions

    1.
Add the ground almonds, baking soda, turmeric, cumin, coriander, salt, pepper, and lemon juice to a food processor. Pulse to combine.
    2.
Add the egg and blend to a smooth, thick paste. Transfer to a mixing bowl.
    3.
Finely slice the onion and add to the bowl with the batter. Stir well, so that the onion and batter are combined.
    4.
Heat the oil in a small saucepan over high heat. Once hot, scoop a tablespoon of the onion and batter mixture at a time and carefully spoon it into the pan. Fry 3 bhajis at a time. Cook for 1-2 minutes on each side until golden and crisp, then repeat with the remaining batter. Carefully transfer the cooked bhajis to a sheet of kitchen paper to soak up the excess oil.
