Description

Imagine crispy, golden-brown chips, the perfect blank canvas for your favorite toppings. These delightful creations start with a simple dough of melted mozzarella, cream cheese, and coconut flour, creating a base that's both satisfyingly rich and surprisingly light. The dough is carefully spread across a baking sheet, transforming in the oven into a thin, even layer of golden goodness.

Once baked to perfection, the sheet is artfully cut into individual triangles, each destined for a second bake to achieve that irresistible crunch. The result? A batch of sturdy, flavorful chips, ready to stand up to even the most generous piles of toppings.

These chips offer a subtle cheesy flavor that complements a wide array of accompaniments. Think creamy guacamole, zesty salsas, or a warm, comforting cheese sauce. For those who like a bit of heat, a dusting of cayenne or chipotle pepper adds a fiery kick that awakens the palate.

The choice of cheese contributes significantly to the overall taste and texture. A cheese that melts easily, such as Chihuahua, mozzarella, or mild cheddar, works wonderfully to create a smooth, pliable dough. The possibilities are endless, allowing you to customize the flavor profile to your exact liking.

Perfect for parties, game days, or simply a satisfying snack, these chips are best enjoyed fresh from the oven. Their unique composition, while contributing to their delicious flavor, means they are most enjoyable on the day they're made. So gather your favorite toppings, invite some friends, and prepare for a flavorful experience.

These chips are particularly fantastic for creating a loaded plate of beef nachos! The rich, savory flavor of seasoned beef pairs perfectly with the cheesy chips and your favorite toppings, creating a satisfying and unforgettable meal.

    Coconut flour
    4 tsp

Instructions

    1.
Preheat an oven to 350 F. Prepare a rimmed baking sheet with a silicone mat or parchment paper. If using parchment paper, spray the paper with an avocado-based non-stick cooking spray. In a microwave-safe mixing bowl, add shredded cheese and cream cheese. Melt in the microwave on HIGH for 30 seconds.
    2.
Give everything a good stir. If it is not completely melted, add it back into the microwave for another 20-30 seconds. Stir again. Add raw egg white and coconut flour and stir well. You can use pasteurized liquid egg white for this recipe to make it easier.
    3.
Divide the dough equally in half. Scoop dough into the prepared baking sheet and spread the dough using a rubber spatula or wooden spoon into a thin oblong shape. You want the dough spread as thin as possible without being see-through.
    4.
Bake the dough for 10-12 minutes or until lightly golden brown. Then remove them from the baking sheet and cut the dough pieces into strips. Then cut each strip into triangles. Place the triangle onto the same baking sheet and bake again at 300 F for 20 minutes until the chips are golden brown and crispy.
