    In a bowl, combine the ground turkey with the initial amounts of salt and pepper, onion powder, mustard powder, paprika, and mayo. Divide the mixture into equal portions and flatten them into patties approximately 5 inches wide.

    Heat the olive oil in a pan over medium-high heat. Place the turkey patties in the pan and cook for at least 5 minutes per side, or longer to achieve a desired char. Once cooked, set the burgers aside to rest.

    Melt the butter in the same pan over low heat to deglaze it. Add the chopped mushrooms, the second amounts of salt and pepper, and the garlic. Cook the mushrooms over medium-low heat until they are tender and browned from the butter.

    Arrange the cooked mushrooms into portions equal to the number of burgers. Place a slice of Swiss cheese over each mushroom portion. Cook until the cheese is melted on low heat.

    Turn off the heat. Use a spatula to carefully transfer each portion of mushrooms and melted Swiss cheese onto a cooked turkey burger. It's perfectly fine if the cheese and mushrooms mix together!
