Instructions

    Preheat an oven to 375 degrees. Slice the zucchini into approx. 20, ½-inch thick slices. Arrange the slices on a sheet tray lined with parchment paper. Sprinkle the salt and pepper over the zucchini. Then, spread about ½ tsp of marinara on top of each slice.

    Dice fresh mozzarella from a ball into small cubes. Arrange 2-3 cubes of cheese on top of each spread of marinara.
