Description

Imagine a warm, comforting casserole, its aroma filling your kitchen with the vibrant essence of a south-of-the-border fiesta. This slow-cooker wonder transforms simple ingredients into a deeply satisfying meal, perfect for sharing with family and friends. Tender ground beef, infused with a medley of aromatic spices, forms the heart of this dish.

Each bite is a burst of savory goodness, balanced by the subtle sweetness of colorful vegetables. Bell peppers, onions, and perhaps even some zucchini mingle harmoniously, their textures softening as they simmer in the flavorful broth. The slow cooking process allows the flavors to meld and deepen, creating a richness that is both comforting and complex.

The addition of cauliflower, cleverly standing in for rice, provides a delightful textural contrast and soaks up all the delicious juices. As the casserole cooks, the cheddar cheese melts into a golden, bubbly blanket, adding a tangy and creamy counterpoint to the savory beef and vegetables. The melted cheese creates pockets of gooey delight that complement each bite.

This casserole is incredibly versatile and invites customization. Consider serving it with extra cauliflower to mimic rice or top it with fresh slices of creamy avocado for a cool, refreshing touch. A dollop of homemade salsa adds a zesty kick.

The dish is a celebration of flavors and textures, a testament to how simple ingredients, when combined with care and attention, can create a truly memorable culinary experience. This dish is ideal for a relaxed weeknight dinner or a potluck gathering. Its ease of preparation makes it a convenient option for busy individuals, while its deliciousness ensures that it will be a crowd-pleaser.

The casserole’s versatility extends to leftovers, which can be enjoyed as a quick lunch or repurposed into a flavorful filling for lettuce wraps or stuffed bell peppers. Each spoonful offers a symphony of tastes and sensations, from the savory meat to the tender vegetables and the tangy cheese. It is a dish that nourishes both the body and the soul.

Instructions

    1.
Heat the olive oil in a skillet over medium-high heat. Add the ground beef and cook until browned, stirring and breaking it into small pieces.
    2.
Dice the onion and chop the garlic. Dice the bell peppers and zucchini into bite-sized chunks. Slice the olives. Add the browned beef to a slow cooker, along with the onion, garlic, peppers, zucchini, olives, oregano, chili powder, paprika, coriander, and cumin. Adjust spices to taste.
    3.
Add the stock and passata (tomato sauce) to the slow cooker. Stir well to combine. Add salt and pepper as desired. Place the lid on the slow cooker. Set to high and cook for two hours.
    4.
After two hours, remove the lid and add the cauliflower rice. Stir well to combine. Scatter the grated cheese over the casserole. Return the lid and cook for a further 15-20 minutes, or until everything is piping hot and the cheese has melted.
    5.
Once cooked, top the casserole with jalapeño slices. Roughly chop the cilantro and scatter over the top to serve. Serve hot with your preferred Keto Mexican sides.
