Description

This Mexican-inspired cauliflower rice is a celebration of vibrant flavors and textures, designed to complement your favorite Mexican main courses. Imagine a bed of tender, subtly flavored cauliflower and broccoli rice, infused with aromatic herbs and spices that evoke the warmth and zest of traditional Mexican cuisine. This dish offers a lighter, more wholesome alternative to traditional rice, without sacrificing any of the satisfying taste.

Diced tomatoes, crisp bell peppers, and fragrant onions are woven throughout the rice, adding a burst of freshness and a delightful crunch with every bite. The vegetables are cooked just enough to soften slightly, while still retaining their individual character and vibrant colors. A generous topping of grated cheese melts slightly into the warm rice, adding a creamy, savory note that perfectly balances the spice and acidity of the other ingredients.

Diced avocado, with its rich, buttery texture, provides a cooling contrast and adds another layer of indulgence. Fresh cilantro, with its bright, herbaceous aroma, is sprinkled generously over the top, along with thinly sliced scallions, adding a final touch of freshness and visual appeal. This versatile cauliflower rice is easily adaptable to various dietary preferences.

Beyond being a wonderful side dish, this cauliflower rice shines as a foundation for burrito bowls, paired with sizzling shrimp fajitas, or served alongside succulent pulled pork. Its straightforward preparation and adaptable flavor profile make it a reliable choice for anyone seeking to add a healthy and delicious element to their meals. This will quickly become a staple, offering a symphony of flavors and textures that will leave you feeling satisfied and energized.

Instructions

    1.
Heat the olive oil in a skillet over low-medium heat. Finely dice the tomatoes, bell peppers, and onion, and crush the garlic. Add the prepared vegetables to the skillet. Stir well to combine and sauté gently for 2-3 minutes until softened.
    2.
While the vegetables are cooking, prepare the broccoli rice by washing the broccoli and trimming the tips of the florets with kitchen scissors into rice-sized pieces. Add the broccoli and cauliflower rice to the skillet. Add the lime zest, paprika, chili powder, coriander, and cumin. Stir well to combine and pan-fry gently for a minute until fragrant. Adjust the level of spices as needed to suit your taste.
    3.
Add the vegetable stock to the skillet. Bring to a gentle boil, then reduce to a simmer. Simmer the rice for 5-6 minutes, or until the stock has all evaporated. Season with salt and pepper to taste.
    4.
Transfer the cooked Keto rice to a large serving bowl. Dice the avocado and roughly chop the cilantro and scallions. Scatter the grated cheese over the top of the rice and garnish with the avocado, cilantro, and scallions to serve.
