Instructions

    Preheat the oven to 195 degrees Fahrenheit (90 degrees Celsius) and line a shallow baking tray with parchment paper.

    Add all the xylitol to a food processor and blend on high speed until it forms a fine powder.

    To make the meringue, add the egg whites to the clean bowl of a stand mixer and whisk on high speed for about 30 seconds. Gradually add ½ cup of the xylitol powder.

    Continue whisking for about 5 minutes until glossy, stiff peaks form.

    Fit a piping bag with a large star-shaped nozzle and fill the bag with the meringue mixture.

    When ready to serve, add the cream and the remaining powdered xylitol to the stand mixer. Whisk until light and fluffy but slightly firm, about 2-3 minutes.
