Instructions

    1.
    Soak skewers in water overnight to prevent them from burning on the grill.
    2.
    Dice chicken into 1 cubes. Place in a large mixing bowl and combine with all the dried spices including the black pepper and t salt.
    3.
    Cut the cauliflower into florets, the green bell pepper into 1” pieces and cut the zucchini in half and then into half moon shapes. Toss all the veggies in 2 T olive oil and t salt.
    4.
    Start skewering by alternating chicken, zucchini, bell pepper, cauliflower. I would also double up on chicken once in awhile if the pieces were on the smaller side.
    5.
    Preheat a grill until it’s very hot. Place skewers on the grill and cook on each side for several minutes until the chicken is cooked through and the veggies have a nice char on them about 12-15 minutes. Serve hot!
