Instructions

    Preheat an oven to 350 F. Add the olive oil to a medium-sized nonstick skillet.

    Spread the oil around to coat the pan. Crack the eggs into the pan.

    Dollop the sour cream around the eggs evenly and salt the top with ¼ tsp kosher salt. Top with asparagus that has been trimmed of their woody ends. Place the skillet into the oven for 10-12 minutes or until the egg whites are set. The yolks should still jiggly as they will continue to cook as the pan exits the oven.

    While the eggs are cooking, slice the red onion into thin slices, drain the capers, chop the dill and have the bagel seasoning ready. When the skillet comes out of the oven, immediately top it with all the toppings. Serve immediately.
