Description

Imagine a bowl filled with delicate, translucent noodles, each strand offering a unique, slightly chewy texture that perfectly complements a rich, homemade tomato sauce. This isn't just any pasta dish; it's a mindful creation, crafted to be both deeply satisfying and supportive of specific dietary needs. The noodles, made from yam flour, provide a light and airy base, allowing the vibrant flavors of the sauce to truly shine.

The tomato sauce is the heart of this dish, a labor of love simmered to perfection. Its sweetness is balanced by a gentle acidity, creating a depth of flavor that dances on the palate. Fresh herbs, such as basil or oregano, can be stirred in to further enhance its aromatic complexity.

You have complete control over the seasoning, allowing you to tailor the sauce to your precise preference. Tender pieces of chicken, seasoned with a harmonious blend of spices, nestle amongst the noodles and sauce. The chicken is cooked to juicy perfection, its subtle savory notes providing a delightful contrast to the sweetness of the tomatoes.

Each bite is a symphony of textures and flavors, a comforting and nourishing experience that leaves you feeling completely content. This dish is incredibly versatile, lending itself well to customization. Feel free to add your favorite vegetables – perhaps some sautéed mushrooms, bell peppers, or zucchini – to further enrich the flavor and nutritional profile.

A sprinkle of cheese, if desired, adds a touch of creamy indulgence. Beyond its deliciousness, this recipe is also incredibly practical. It's ideal for meal prepping, making it easy to enjoy a healthy and flavorful meal even on the busiest of days.

The components can be stored separately or together in the refrigerator for several days, ensuring that you always have a wholesome and satisfying option readily available. For longer storage, the chicken can be kept separately. Whether enjoyed as a quick weeknight dinner or a carefully planned lunch, this noodle dish is a testament to the fact that mindful eating can be both delicious and convenient.

Instructions

    1.
Heat extra virgin olive oil in a large saute pan over high heat. Add minced garlic and let the garlic simmer in the hot oil until it’s fragrant - about 60 seconds. Then, add whole grape tomatoes to the pan so they blister in the oil.
    2.
Cover the pan and let the tomatoes roast while the skins peel away from the fruit. Keep roasting until the tomatoes turn soft in the pan and cook down on their own. Then, add almond milk and water to the tomatoes.
    3.
Add onion powder and large chopped basil leaves to the pan. Salt and pepper to taste. Bring the pot to a boil, then reduce it to a simmer to cook for about 10-15 minutes. Remove the pan from the heat and use either an immersion blender or countertop blender to blend the tomatoes into a sauce.
    4.
It’s your choice if you want a completely smooth tomato sauce or one with some chunks of tomato still visible. Return the tomato sauce to the stove and cover the pan with a lid. Let the sauce bubble on low heat until it reduces to the right thickness - about 3-5 minutes.
    5.
While the sauce is cooking down, prepare the shirataki noodles by draining the water from their packaging and adding the noodles to a new pan on the stove. Cook the noodles at high heat to dry them out without burning them. Toss approximately 4 ounces of noodles with 6 tablespoons of tomato sauce.
    6.
To make the chicken breast, season the chicken with lemon pepper seasoning (with salt) and Italian seasoning. Heat the olive oil in a pan over high heat, then place the chicken in the hot oil. Cook the chicken breasts on either side until cooked through, adjusting the heat as needed to avoid burning. Serve with the pasta.
