Description

Experience a delightful reimagining of classic fish and chips, crafted for a lighter palate. Delicate haddock fillets are enveloped in a crisp, golden batter and shallow-fried to achieve the perfect balance of textures. The exterior boasts a satisfying crunch, giving way to the flaky, tender fish within.

The light frying ensures a delicious meal without being overly heavy. Accompanying the fish are oven-roasted kohlrabi batons, offering a unique and flavorful alternative to traditional fries. These 'chips' are coated in a savory blend of almond flour and Parmesan cheese, creating a crispy, golden crust that complements the soft, slightly sweet interior of the kohlrabi.

The roasting process coaxes out the natural sugars in the kohlrabi, enhancing its inherent sweetness and providing a delightful contrast to the richness of the fish. For those seeking an even lighter preparation, baking the fish is an excellent option. The oven's gentle heat ensures the fish remains moist and succulent while minimizing added fats.

Alternatively, for a more indulgent experience reminiscent of traditional fish and chips, the fish, and the kohlrabi, could be deep-fried. The overall effect is a symphony of textures and flavors – the crispness of the batter, the tenderness of the fish, and the savory sweetness of the roasted kohlrabi. This dish is both satisfying and flavorful, offering a delightful alternative to the classic comfort food.

Serve with your favorite sauces, such as a zesty tartar sauce or a creamy aioli, to complete this satisfying meal. This modern take on a beloved classic is sure to please.

Instructions

    1.
Preheat the oven to 390F/200C. Drizzle 1 tablespoon of avocado oil on a roasting tray and allow the pan and oil to heat up. Peel and slice the kohlrabi into thick-cut chips.
    2.
Transfer the kohlrabi chips to a large bowl. Drizzle with 1 tablespoon of avocado oil, season with salt and pepper, and sprinkle over 2 tablespoons of almond flour and grated Parmesan cheese. Toss to coat evenly.
    3.
Carefully place the coated kohlrabi chips onto the preheated roasting tray, spreading them out evenly. Roast for 10 minutes on one side, then flip and roast for another 10 minutes until golden brown.
    4.
In a large bowl, combine the remaining almond flour, arrowroot powder, whey protein powder, baking soda, paprika, and turmeric powder. Stir to combine, create a well in the center, and add the egg, apple cider vinegar, and heavy cream. Whisk until smooth with no lumps.
    5.
Pat the fish fillets dry with paper towels and dip them into the batter, ensuring they are fully coated. Heat a large non-stick frying pan over medium-high heat with the remaining avocado oil. Shallow fry the fish on each side for 2-3 minutes, or until golden and crisp and the fish is cooked through. Repeat with all the fillets. Serve the battered fish with the chips and your preferred keto-friendly sauces.
