    In a mixing bowl, combine the ground lamb, coriander, cumin, cinnamon, onion powder, and egg. Finely mince the garlic and add it to the bowl. Use your hands to thoroughly mix all ingredients together until well combined.

    Turn the lamb mixture out onto a sheet of plastic wrap. Press the mixture into a rectangle shape, approximately 1/2 inch thick, ensuring an even distribution.

    Evenly scatter the spinach and mint leaves over the lamb rectangle. Sprinkle the pine nuts and cranberries over the spinach and mint. Crumble the feta cheese evenly over the cranberries and pine nuts.

    Carefully lift the long edge of the plastic wrap and roll the meat over the filling towards you. Once the edges meet, pinch them together tightly to seal the filling completely inside the meatloaf. Refrigerate the wrapped meatloaf for 20 minutes to allow it to firm up.
