Instructions

    Soak 4 wooden kebab skewers in water for 20 minutes to prevent catching in the oven.

    Finely chop and de-seed the chilli and finely chop the cilantro. Add both to a large mixing bowl with the jumbo shrimp, olive oil, lime juice and the zest of the lime.

    Use your hands to combine the ingredients together thoroughly, cover and leave to marinade in the fridge for 15 minutes.

    Divide the shrimp evenly, then thread onto the four soaked skewers.
