Instructions

    Preheat a medium skillet over medium-high heat. Add ghee and wait until it's shimmering and hot. Season the chicken breasts with salt. Place the chicken breasts in the pan and cook until nicely browned on one side, about 10 minutes. Avoid lifting or peeking while the chicken is browning! It will naturally release from the pan when it's ready. Turn the chicken and add lemon slices. Continue cooking until almost cooked through, approximately another 10 minutes.

    Add broccoli to the pan, along with 1 tablespoon of lemon juice and 1 tablespoon of water. Cover the pan with a lid and continue cooking until the chicken reaches an internal temperature of 165°F.

    Remove the chicken from the pan and let it rest for 5 minutes before slicing. Prepare your lunch containers with sliced chicken, cooked broccoli, and cauliflower rice!
