A whisper of fresh orange zest brightens the entire composition, its citrusy aroma awakening the senses and adding a layer of complexity that ties all the elements together. This dish is a celebration of textures and tastes, where the familiar comfort of green beans is reimagined with sophistication and flair.

The combination of salty, sweet, and savory notes creates a harmonious balance that is both satisfying and intriguing. Instructions

    1.
Heat the olive oil in a skillet over a medium/high heat. Add the pancetta and cook through until crisp and golden. Remove from the skillet with a slotted spoon and set to one side.
    2.
Thinly slice the garlic and shallot. Add to the skillet used to cook the pancetta. Sweat gently over a low heat for 2-3 minutes until tender.
    3.
Add the cooked green beans to the skillet. Scatter over the flaked almonds and add the orange zest, salt, and pepper. Toss the beans and almonds in the fat and pan fry over a medium heat for 4-5 minutes or until the beans are hot through.
    4.
Roughly chop the cranberries and toss them through the beans. Return the pancetta to the skillet and stir everything together well to combine. Serve hot.
