Description

Imagine a delicate, pliable flatbread, its subtly nutty flavor complementing both savory and sweet fillings. This simple bread offers a wonderful alternative for those seeking to reduce carbohydrates while still enjoying the simple pleasure of a satisfying bread-like experience. Its tender yet resilient texture makes it ideal for wrapping flavorful ingredients or soaking up delectable sauces.

Crafted from almond flour and a single egg, this bread boasts a remarkably straightforward preparation. The dough comes together quickly in a food processor, transforming into a smooth batter ready for the skillet. As it cooks, the aroma fills the kitchen, hinting at the delightful treat to come.

The result is a thin, flexible bread with a pleasingly mild taste that doesn't overpower other flavors. For those who prefer an alternative to almond flour, coconut flour can be used, offering a slightly different texture and flavor profile. Whether you choose almond or coconut, the resulting flatbread is incredibly versatile.

Wrap it around thinly sliced deli meats and cheeses for a quick and easy lunch, or use it to create a flavorful wrap with your favorite grilled vegetables and hummus. It's also excellent for scooping up dips, sauces, or curries, adding a delightful textural element to your meal. This bread is best enjoyed fresh, offering the most optimal texture and taste.

If you have leftovers, storing them properly will help maintain their quality. You can keep them in the refrigerator for a couple of days, or freeze them for longer storage. Whether enjoyed immediately or saved for later, this bread brings the simple joy of bread back to your table, without compromising your dietary goals.

Serve it alongside smoked salmon, use it as a pizza base, or simply enjoy it on its own as a light and satisfying snack.

Instructions

    1.
Combine all the ingredients into a food processor. Blend until smooth.
    2.
Continue blending until the mixture forms a ball that moves around the food processor.
    3.
Turn the dough out onto a cutting board and divide it into 6 equal pieces using a plastic bench scraper or knife.
    4.
Shape each piece into an oblong shape and place it between two pieces of parchment paper. Roll it flat with a rolling pin until it is about 1/8" thick.
    5.
Heat a large nonstick skillet over medium-high heat. Place the dough (parchment side up) in the skillet. Cook for about 30 seconds until the dough starts to brown and the parchment paper easily releases. Gently use a rubber spatula to release any parts of the dough that stick to the paper.
    6.
Flip the lavash and cook it on the other side for 30 seconds or until browned. Repeat with the remaining pieces of dough. Serve hot!
