Description

Imagine sinking your teeth into a warm, golden-brown bun, its crust hinting at the delightful flavors hidden within. These cheddar jalapeno buns offer a unique and satisfying experience, far from ordinary bread. The dough, rich and subtly tangy, is studded with generous pockets of sharp cheddar cheese and punctuated by the lively spark of diced jalapenos.

Each bite delivers a delightful balance of creamy, cheesy comfort and a gentle, warming heat. The baking process transforms these humble ingredients into something truly special. The exterior develops a beautiful sheen and a satisfyingly crisp texture, enhanced by a delicate sprinkling of salt that amplifies the savory notes.

The interior remains soft and airy, a perfect contrast to the slightly chewy, cheese-laden pockets. The aroma that fills your kitchen as these bake is simply irresistible, a tantalizing blend of warm bread, melted cheese, and the subtle piquancy of jalapenos. These buns are incredibly versatile.

Their sturdy structure makes them ideal for slicing and layering with your favorite burger fillings, creating a hearty and flavorful sandwich that holds its shape beautifully. The subtle heat of the jalapenos cuts through the richness of the burger, while the cheddar cheese melds harmoniously with all the other flavors. Alternatively, enjoy them simply as cheesy rounds, slathered with butter for a quick and satisfying snack.

The textural contrast – the crisp exterior yielding to the soft, cheesy interior – is simply divine. For the best texture, be sure to remove the seeds from the jalapenos before adding them to the dough. Don't be afraid to bake these buns until they are a deep, golden brown and sound hollow when tapped; this ensures they are fully cooked and have developed their optimal flavor and texture.

If they happen to shrink slightly upon removal from the oven, a few extra minutes of baking will usually do the trick. Whether you're pairing them with juicy burgers or enjoying them on their own, these cheddar jalapeno buns are sure to become a new favorite.

Instructions

    1.
Preheat an oven to 350 F. Combine almond flour, psyllium husk, kosher salt, and baking powder in a stand mixer bowl. Mix with a paddle attachment. Add ¾ cup cheddar cheese and diced, deseeded jalapenos, and blend briefly.
    2.
Add the apple cider vinegar to the boiling water. Add the boiling water mixture to the dough, melting the cheese. Mix until combined, about 1 minute.
    3.
Add the eggs and blend well for another minute or so.
    4.
Add in the remaining cheese and mix in briefly to fold in.
    5.
Divide the dough into four pieces and roll them into nice balls. Place them on a parchment-lined baking sheet, separated from each other.
    6.
Combine the yolk with the milk and ⅛ tsp kosher salt. Brush the tops of the buns with the yolk mixture and sprinkle them with a generous amount of salt.
    7.
Bake for 50-55 minutes. They should be nice, dark brown, puffed, and do not sink as they exit the oven. They should also sound hollow when tapped. Allow to cool completely on the baking sheet. Freeze any unused buns.
