Description

Imagine a succulent whole chicken, its skin glistening with a rich, savory coating. This pressure-cooked chicken recipe transforms an ordinary meal into an extraordinary experience, delivering tender, juicy meat infused with aromatic flavors. The secret lies in the fragrant tomato-based paste, a blend of herbs and spices that penetrates deep into the chicken, creating a symphony of taste with every bite.

Preparing a whole chicken has never been easier or faster. This method is ideal for busy weeknights when time is of the essence. The pressure cooker works its magic, sealing in moisture and flavor, resulting in a chicken that is both incredibly tender and remarkably juicy.

The aroma that fills your kitchen as it cooks is simply irresistible, promising a delightful meal to come. The beauty of this dish lies in its simplicity and versatility. With minimal effort, you can create a satisfying and flavorful centerpiece for any occasion.

Whether it's a casual family dinner or a relaxed Sunday lunch, this chicken is sure to impress. To ensure even cooking and optimal flavor, it's important to select a chicken that fits comfortably within your pressure cooker. A three-pound chicken is ideal, allowing for proper heat circulation and ensuring a consistently delicious outcome.

Don't forget to add liquid to the base of the pot, as this is essential for creating steam and preventing the chicken from drying out. The steam helps to keep the chicken moist and succulent, enhancing its overall flavor and texture. Once cooked, the chicken boasts a beautiful, caramelized skin and meat that falls effortlessly off the bone.

Each portion is a delightful combination of textures and tastes, from the slightly crispy skin to the tender, juicy meat infused with the savory tomato paste. Serve this flavorful chicken with a vibrant side salad for a light and refreshing contrast, or pair it with roasted vegetables for a more substantial and comforting meal. The possibilities are endless, allowing you to customize your sides to suit your preferences and create a complete and satisfying dining experience.

This recipe comfortably serves four, providing a generous quarter chicken per person, making it a perfect option for a family meal or a small gathering of friends.

Instructions

    1.
Add the passata (tomato sauce), paprika, garlic powder, lemon juice, cumin, mustard powder, syrup, oregano and salt to a small bowl. Mix together well to combine. You should have a thick marinade.
    2.
Arrange the chicken on an appropriate work surface. Spoon the marinade over the chicken. Use your hands to rub the marinade in an even layer all over the bird.
    3.
Set the trivet in your instant pot. Add the water to the base of the pot. Sit the chicken on the trivet and close the lid. Set to cook on high pressure for 20 minutes as per the manufacturers guidelines. After this time, naturally release the pressure for 15 - 20 minutes.
    4.
Remove the cooked chicken from the instant pot and sit on a foil lined grill tray. Set a broiler to high. Sit the chicken on the tray under the broiler for 5-6 minutes or until the skin is crisp and golden.
